Foie Gras Producing Areas in France

Foie Gras Production and Traditional Producing Areas

France provides more than 80% of the world foie gras production. The French production proceeds from three different areas: Alsace, the South-West region and the West region.



Alsace

Till the 50s, Alsace was the leading producing area in France. There were plenty of small independent artisans and dozens of big industrial producers exporting a great part of their foie gras to Germany, Austria and Hungary. The whole region was specialized in goose foie gras.

After Second World War, trade relations with Germany broke off and the Alsatian production started to decline. Nowadays, Alsace only represents 3% of the French production. No more than a few traditional producers and 3 big industrial brands still remain.



The South-West region

The South-West region represents more than 70% of the duck foie gras production and more than 80% of the goose foie gras production in France. This wide area includes in particular 3 counties that have been producing foie gras for centuries: the Landes, the Gers and the Périgord. The South-West region gathers together on the one hand hundreds of small, independent, uniquely dedicated producers perpetuating the foie gras tradition and on the other hand big industrial producers.



The West region

Formerly specialized in poultry, the West region of France started to produce foie gras some years ago. This area is specialized in industrial duck foie gras. It represents 26% of the French duck foie gras production. The West region production is very industrial and greatly differs from the traditional foie gras processing methods.
