Foie gras with gingerbread, fresh figs and honey

Foie gras is usually served with French baguette, farmhouse, wholewheat or brioche bread. Why not surprise your guests and serve it with gingerbread, the sweet and spicy aromas of which emphasize the foie gras rich flavors? Spread with honey, gingerbread slices are moist and smooth. Fresh figs, which were formerly used by the Egyptians and the Romans to feed geese, perfectly accompany these succulent ingredients.



Ingredients (for 4 persons)
  • Foie gras entier or bloc de foie gras: 200g - 7 oz
  • Gingerbread: 300g - 11 oz
  • Clear honey, preferably French garrigue honey or spicy honey: 200g - 7 oz
  • Quite ripe fresh figs: 500g - 0.5 lb

Recipe

Place the foie gras can in the refrigerator for a few hours and take it out 15mn before the meal. Deep a sharp knife in hot water, wipe it and then cut the foie gras into 7 to 10mm (0.3 inch) slices.

Slice the gingerbread and spread each slice with a little bit of honey. Then, place the foie gras slices on the bread.

Gently heat fresh figs in a bain-marie or a microwave, then add them to the plates and cover them with honey.

This dish is ideal to serve at the beginning of the meal with a very sweet white wine or liqueur.
